Enchant
WOW! I have been listening to Enchant since'95, and always enjoyed them, especially Blueprint of the World. I went ahead and purchased all of their albums as they came out, and again, enjoed them. I was never a huge fan, until this week. I got to listening to Blink of an Eye and I CANNOT GET ENOUGH of these guys! Check 'em out!

Orphaned Land
I got turned on to Orphaned Land a while ago and I can't say enough about them. They are a band out of Israel, and they are quite heavy. However, they also have a lot of traditional middle-eastern folk influences. Imagine a middle eastern version of Opeth, and you'll have an idea of what they're like.
